Vineyard Description
The fruit for this wine represents a variety of vineyards, clones and viticultural techniques in the Wairau and Awatere valleys. All of the vineyards are run with an unrelenting focus on vine health and balance. Extensive canopy manipulation is carried out to ensure this ‘balance’ is achieved.
Winemaking
Fruit was hand-harvested, destemmed and crushed into open-top fermenters. While it fermented, the fruit was hand plunged. Following pressing and malolactic fermentation, the wine was moved to French Oak barrels (25% of which were new), where it spent the next 14 months maturing. The wine was then minimally fined with egg whites, lightly filtrated and bottled.
